A Florida man is behind bars after a dispute over a restaurant bar tab spiraled into a DUI arrest, leaving his alleged wife to face the consequences of a night that began with expensive wine and ended in handcuffs. Ruby Cologne, 47, was taken into custody on December 29, 2024, after police responded to a Palm Beach Gardens restaurant where he and his companion, Lauren Gara, had allegedly refused to pay a $300 bill for a lavish meal that included pricey wines and tiramisu. The incident, captured on police body camera footage, unfolded just before 8:15 p.m. at a local establishment where staff had already flagged the couple as problematic from a previous visit.
According to the Palm Beach Gardens Police Department, officers arrived to find Gara still seated at the bar, arguing with staff over the tab. The bartender told police that the couple had ordered some of the most expensive items on the menu, including multiple glasses of wine, and then tried to negotiate the price down after consuming everything. Gara was heard on video insisting she would only pay $100 less than the full amount, claiming the bill was unfair. The restaurant manager, who had been in business for 18 years, told officers she wanted the couple prosecuted and banned from the premises.
While officers dealt with Gara inside, another officer spotted Cologne in the parking lot attempting to move his vehicle. The officer reported that Cologne had pulled forward as she approached, raising immediate suspicion. When confronted, Cologne admitted he had been driving, stating he was waiting for his wife to pay the bill and leave. However, he quickly revealed that his driverās license was suspended, a fact that would prove critical. Cologne reportedly told police he had consumed three vodka and cranberry drinks and had eaten pasta and bread during the meal.
Inside the restaurant, Gara continued to resist paying the full bill, even invoking President Trump in a bizarre attempt to justify her refusal. āPresident Trump says that I have the right to write down what I want here,ā she told officers, who repeatedly warned her that failure to pay would result in arrest. After nearly 30 minutes of negotiation, Gara finally produced a credit card that went through, allowing her to avoid jail time. On January 16, 2025, Cologne pleaded not guilty to the charges, but by February 2025, he had changed his plea to guilty. He was sentenced to 15 months in prison, with credit for 70 days of time served. Court records indicate he has since been released and remains on probation until January 2028. The restaurant staff expressed relief at the outcome, with the manager stating she hoped the couple would never return.
